However, recently we have been itching to expand and do more with the Weekend Grillers.

Rum BBQ Shrimp is gastronomic alchemy.

Honey, lime, rum, ginger and shrimp all have very strong and pronounced flavors. But when you mix them all together and add a little smoke, something magical happens. It really is a case of the result being greater than the sum of the parts.



Rum BBQ Shrimp If the shrimp are large enough (16/20 size), you can grill right on the grate. We prefer a basket as it is easier to keep the shrimp from falling through and easier to turn.

You could also kabob them.

Rum BBQ Shrimp



Ingredients
  • 1/2 cup freshly Squeezed Lime Juice
  • 1/2 dark Rum
  • 1 tablespoon freshly grated Ginger
  • 2 tablespoons cornstarch dissolved in 2 tablespoons Lime Juice
  • 3/4 cup Honey
  • Salt and Pepper
  • Zest of 2 Limes
  • 1/4 cup Cilantro, finely chopped

  • 20 Large Shrimp, peeled and deveined
  • 2 tablespoons oil
  • Salt and Pepper

Directions

To prepare glaze

  1. Combine lime juice, rum and ginger in saucepan.
  2. Bring to boil over high heat.
  3. Whisk in cornstarch mixture and honey.
  4. Salt and pepper to taste.
  5. Cook until reduced and thickened (about 1 to 2 minutes.)
  6. Remove from heat and let cool completely.
  7. Stir in zest and cilantro.

To Cook Shrimp

  1. Prepare medium hot fire in your grill (Click here to tell the temp of your fire with just your hand)
  2. Toss the shrimp with the oil and 6 tablespoons of glaze.
  3. Salt and pepper to taste.
  4. Lay out shrimp on grate or in basket.
  5. Grill for 1 to 2 minutes per side brushing frequently with glaze. Shrimp are done when they turn a bright pink on the outside and white on the inside. Try not to overcook them.
Serve.
